So the truth is we are seriously sweet toothed family (you know that makes us ultra sweet from the inside –  ha ha – late night blogging does this to you)…right from when my grandmother would make homemade Kulfi ( an addictive homemade Indian icecream ) to my mother’s Pineapple Upside Down Cake to her delectable perfectly formed Baked Alaska and now in my generation, repeating most of mum’s recipes to developing a new fun breed of my own! Somehow our meals just aren’t quite complete without a little slice or scoop of some sweetness and you know, that is just ok sometimes. I’m usually a big strict on healthy eating at home, especially with the kids, but sometimes, you just got to let the good times roll!

This recipe was made under twenty minutes and was created as my two little ones pleaded, begged and bribed and almost threatened all sorts of crazies until I made them a treat. Who can resist these little clever, puppy eyed little dealmakers? So this actually has turned into quite an impressive number and I wouldn’t be too embarrassed to serve this to a more ‘mature’ crowd. I doubt even a serious food connieseur is going to have any issues with layers of vanilla cream, buttery crumbly biscuit and a thick lush layers of milk and dark chocolate layers…

This is definitely a quick fix recipe so there is totally no shame in using some quick short cuts like the vanilla pudding mix – it’s just what you do to these products to take them to their next level of greatness!!!

For the Vanilla Cream

  • 1 packet of Vanilla Pudding mix
  • 1 tsp custard powder
  • 650 ml fresh double cream
  • 1 tbs icing sugar

For the Milk Chocolate Layer

  • 500gms good quality milk chocolate
  • 1 egg yolk
  • 1 heaped tsp butter
  • 1 tbs double cream

For the Dark Chocolate Layer

  • 5 tbs Nutella Hazlenut spread ( or I must admit I am a new BIG fan of the new Galaxy spread!)
  • 250 gms dark chocolate, finely grated
  • 3 tbs double cream

For the Biscuit Layer

  • 3/4 packet of digestive biscuits, crushed
  • 2 heaped tbs salted butter, melted

 

Start by making the Vanilla- Custard Cream. Simply combine all the ingredients and beat with an electric whisk on a low speed. It will get thick very quickly so be careful, you want it  thick but still a creamy consistency. Check for your preferred level of sweetness and adjust if your would like. Place straight in a cold fridge – this is especially important if you want to serve it straightaway!

For the milk chocolate layer, place the broken pieces of milk chocolate in a heavy pan with the butter and cream, let it all melt on a very very low heat slowly stirring until you get it to a liquid level and it just starts to warm up ( YOU DON’T WANT THIS TO GET HOT AT ALL – JUST LIGHTLY  WARM). Add the egg yolk and whisk until glossy. Set aside

For the Dark Chocolate Layer, place the Nutella/ Galaxy spread, dark chocolate shavings and cream into a bowl and melt in bursts of 10 seconds in the microwave on high, stirring well each time so you get a nice thick dark mix.

Finally mix your crushed digestive biscuits with the melted butter.

Now simply start to layer up this ultra delish treat!

First add a layer of biscuit mix, next add  a thick, luscious layer of the Vanilla Custard Cream.

Sprinkle a second thin layer of biscuit.

Then add a nice thick layer of dark chocolate mix and then the milk chocolate mix.

Finish with a thick layer of cream and a final sprinkling of salty-sweet biscuit crumble.

Chill for 15 minutes or serve straightaway since the cream will have been chilled in the fridge. Seriously – this one is a keeper :-)))
