Everyone needs a really quick, go - to curry recipe and one of my favourites is a traditional Swahili Coconut Chicken curry - it's so fragrant and reminds me of exotic island, beachside escapes. The earthy, creamy flavours go beautifully with some softly steamed Jasmine rice...all the scents of coriander, cumin and hints of lime coming together in such an elegant symphony ....so if you need a lovely family style, African-Arab influenced dish today - this is a perfectly easy, laidback Sunday style dish to whip up...With Love, Sandy xx
