These little morsels are mouthfuls of heaven! Here’s another really easy and simple idea for a quick appetizer that looks as impressive as it tastes! The combination of the crispy sweet potato, with a touch of fire from the chutney along with a creamy melting, oozing Brie is divine!
Serves 10
4-5 sweet potatoes of roughly the same size
24 thin slices of Brie
12 tsp mango chutney (buy your favourite brand, but I like a slightly chunky chutney to add texture)
3 tsp ZATAR spice or dried thyme as an alternative.
Oil for deep frying
Slice each potato into thin round circles as shown . Each potato will yield at least 5-6 slices.
Heat the oil to medium hot and deep fry the potato slices for 5-6 minutes, flipping over once or twice until golden brown.
Drain on a kitchen towel and place in a baking tray.
Place your oven setting on grill.
Spread 1/2 tsp of mango chutney on each potato slice.
Top with a small slice of Brie
Sprinkle some Zatar spice or thyme over the top and bake until Brie is melting and starting to bubble
Serve immediately with a scattering of sage leaves for that festive feel. Oh the joy of cooking for the holidays!
