Kitchen Conundrum is back today with a very timely request coming in from Fiona..

‘Hi Sandy! We are definitely going to be watching a lot of the World Cup matches, but I am worried about just having the same old unhealthy crisps and fried snacks as we watch the games…what do you recommend that I could put on the table that will keep them going and is healthier?’

Sandy says….

We’re all thinking the same thing Fiona and there are plenty of matches to watch! My quick fix solution for the family and even bigger crowds, apart from the usual wings and ribs etc, are large mixed Antipasto platters. I love these as you can literally add whatever you feel like, from olives to corn off the cob, to chipolatas, even bits of bacon as well as all the traditional salamis and cheeses. I roast mixed peppers,  slice them up, drizzle over with some olive oil and a squeeze of lemon sprinkled with salt and freshly cracked black pepper. Make some homemade tzatziki or humous for dips.  Slice up some radishes and steam bunches of asparagus. So, really don’t follow any rules..just go with what you have fresh in your fridge and what is in your larder.  This is a Sunday afternoon special I’ve been doing for years when we watch a movie and the kids love it. It’s also a great way to get them to experiment with pickles and cheeses. I’ve included some photos of past platters I’ve whipped up in a jiffy!
