I loved your make-your-own fajitas party tip, it worked a treat for my son’s 8th birthday party! I used tortillas instead of fajitas, and they were just as popular. But now I have some leftover tortillas that are going slightly stale and I wondered if there was any way I could use them for something yummy? Fiona.

Absolutely! Leftover tortillas needn’t be thrown away, they can be recycled into some delicious home baked chips. In fact, I find that my home made tortilla chips are always more popular than shop bought chips, and they seem to just taste that much more scrumptious when dunked into my favorite salsa!

Home Made Baked Tortilla Chips

Step 1: Preheat oven to 200 degrees centigrade.

Step 2: Cut tortillas into equal sized triangles.

Step 3: Spread out triangles in a foil lined baking tray, spreading them out as much as you can

Step 4: Brush lightly with sesame oil for that lovely nutty flavor and sprinkle over some salt.

Step 5: Bake for 5-7 minutes turning them over halfway so they brown and crisp evenly.

Step 6: Serve with your favorite salsa or dip. These will keep for a week once stored in a jar with a tight fitting lid.
