Hello, folks! This recipe is the perfect solution for those parents, aunts, uncles, siblings and grandparents who are LOSING THEIR MINDS over trying to entertain the little ones over the holidays! Luckily, my little terrors are very fond of any type of cooking, so this was a perfect and easy little trick to keep them going for a bit. And, by the way, these are GORGEOUS, and you really have to have them with a cold, cold glass of milk! (that’s if the kids haven’t scarfed them before you!).
- 3/4 cup icing sugar
- 1/2 cup butter
- 3 tbs golden syrup
- 2 cups self raising flour
- 3/4 tsp bicarbonate of soda
- 3/4 tsp ground cinnamon
- 1/2 tsp ground ginger
- 3 tsp water
- Preheat the oven to 180 degrees centigrade. Lightly oil two baking sheets.
- On a low heat, melt the butter and syrup in a saucepan. Set aside.
- Sift all the dry ingredients together and combine with the butter syrup mix.
- Mix well and pull the mixture to make a smooth dough.
- Now, on a generously floured surface, roll out to a 1/4-inch thickness. Take the cutters of your choice and dip these into a little pile of flour. This is a neat trick for making sure the biscuit shapes drop out easily. Transfer onto the baking sheets and bake for 8 – 10 minutes or until golden brown.
Tip: If you are lucky enough to have any left, these cookies are delicious sprinkled over some vanilla ice cream with some flaked almonds and a drizzle of chocolate sauce for a quick-fix treat.
