Today I’m trying to get you introduce more fruit to your diet and I have an irresistible updated version on a classic recipe that you are going to love!

Who says Fruit Salads are boring?! Ok, I can see you wrinkling up your nose in memories of mushy, overly sweet sloppy, school dinner versions, so I am on a mission to show you how to make this traditional dessert recipe sexy and sassy. Vibrant and full of antioxidants and Vitamin C, serve it up with some light fromage frais and they’ll all be lining up for more.

Fresh fruit is always going to taste better, but in this recipe, I will allow for, without too much of a shudder and a shake,the use of tinned versions but please PLEASE whatever you do, drain, drain drain all that sickly sweet brine out!

Fruit Salad with Attitude!

Serves 4

Ingredients

2 cups fresh lychees, peeled (yes, you can used the tinned version, but as above, dispense of all that horrible sweet brine!)

5 baby peaches, peeled and halved (again, same as above if used tinned versions)

1 punnet black grapes

1 punnet strawberries, halved

1 fresh bunch of mint, torn into small pieces

1/2 cup of creme de cassis (this I must admit is my secret ingredient, it is delicious with this combination of fruits)

Juice of two very fresh limes

Finely grated rind of two very fresh limes

2 tbs of pomegranate molasses (if you don’t have this then replace with 1/2 cup of pomegranate juice and 1/2 tbs balsamic vinegar)

1/2 cup passion fruit juice

 

 

In a small jug, combine the creme de cassis, the lime juice, the lime rind, the pomegranate molasses and the passion fruit juice. This makes for a gorgeous, citrusy syrup that will bring all the fruit to life.

Cut and prepare all your fruit and just before serving,  add the fresh mint and pour over the syrup.

Serve with lightly whipped  fromage frais and you might as well say it, you are rather fabulously  brilliant!
