I’ve recently rediscovered my love of frozen Lime Margaritas, with their addictive sweet and sharp sour – all melting slowly from a heap of fine ice and coupled with the stunning sunsets beyond the sand dunes in a Lamu, Kenya, they are simply seductive…here are a small collection of photos taken from my most recent escape, drifting from an ancient Arabic dhow… Happy Sunday dreaming people xx

I played around with a couple of combinations but I’ve got a secret trick ingredient that just brings this classic cocktail to life! It’s so easy to whip up…just have a very strong blender to hand.

Ingredients

Serves 4

Simply place all the ingredients into your liquidizer or blender and blend on the highest speed until the mixture resembles a crushed ice/ slush type of texture.

Place the salt on a small plate. Dip the rim of your Margerita glasses into a shallow plate of water and into the salt. The last time I travelled I bought back some coconut and lime salt and I used that for a bit of a fabulous touch instead of regular salt- WOW, it was pretty good! So feel free to play around with flavoured salts for that extra kick of deliciousness!
