This has to be the life! A weekend spent creating recipes right here on stunning stretches of postcard perfect Diani beach! I’m in my own personal paradise as I create recipes inspired by the beautiful sunshine soaked coastlines of Kenya.

This first recipe brings together two of my very favorite ingredients, apple strudel and ice cream! It’s such an indulgent treat and easy to put together – a totally appropriate use of left over apple pie or strudel!! A sundae in my mind is an assembly job…pulling together all your favourite flavours. It’s also meant to have an element of fun to it, so don’t take it too seriously and enjoy yourself!

Serves 4

8 large scoops of vanilla bean ice cream

8 thin slices of apple strudel or apple pie

Peanut brittle for four people (approx 1 cup)

1 cup butterscotch sauce (see my recipe under Hot Chocolate)

4 tbs whipped cream

In a large sundae glass firstly place a tbs of Butterscotch sauce.

Next add one scoop of vanilla Ben Icecream.

Next add one slice of apple strudel

Repeat the three layers and finish with 1 tbs whipped cream and top with peanut brittle.

Devour without shame!!!!
