At first – I was a little tense on handling the softened rice paper, but I found a trick that helped me ace it. If you lightly oil the surface you put your paper on with sesame oil as you fill it – it becomes a lot more pliable, stretchy and easy to work with. These are my lunchbox favourites and it’s something my daughter makes with me on a quiet Sunday morning as part of a picnic style lunch.
My surprise filling comes in the form of adding a shot of flavour as these rolls can sometimes taste quite bland. I experimented with a few ideas and this was the one voted by my very useful guinea pigs at home! Peanut butter can be replaced with almond butter, Wasabi and sweet and zingy mango completes the taste odyssey!
