Every week, Taste Safari will aim to solve your kitchen conundrums! This one came in recently from Sophia in Nairobi, Kenya:
“I bought a bug bunch of bananas and didn’t eat them in time! What can I do with bananas that are past their prime? Please help me Taste Safari!”
Well there is only one thing that comes to mind with this conundrum – a scrumptious, classic, Banana Bread!
1 cup yoghurt mixed with one cup yoghurt (buttermilk)
1 cup brown sugar
3/4 cup melted butter
2 large eggs
1 and 1/2 cup mashed ripe bananas (tip: use a potato masher – works great!)
1 cups bran flour
1 cup plain flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 tsp nutmeg
1/2 teaspoon Soda bicarbonate
1/2 teaspoon salt
3/4 cup flaked almonds
Preheat oven to 180 degrees. Line a traditional loaf tin with butter and flour.
Whisk buttermilk, brown sugar, melted butter and eggs in a large bowl.
Stir in mashed bananas, both flours, baking powder, cinnamon, baking soda, salt and nutmeg in a medium bowl.
Fold the dry ingredients into the wet ingredients and stir until just combined.
Fold in the flaked almonds. Transfer the batter to the prepared loaf tin.
Bake until the top is golden brown and a wooden skewer inserted in the centre comes out clean, 50 to 60 minutes.
Gorgeous with a helping of vanilla bean ice cream. Oh yum!!
