Filling croissants are such a elegant way of serving a sandwich style dish. Always try and buy the freshest baked croissants possible and once you have tried these, it might be quite difficult to go back to slightly less exciting standard sliced bread sandwiches!

Serves 2

3 freshly baked buttery croissants ( I always pack one extra as there are always requests for more!) or 6 mini croissants

6 thin slices of Parma ham or sliced fresh ham

12 fresh basil leaves, washed and stalks trimmed

4 balls of fresh boccocini

2 tbs fresh green pesto

1 tbs mayonnaise

1 tsp hot English mustard

 

For the Hot Pesto-Mayonnaise:

 Mix the mayonnaise, pesto and mustard together. Set aside.

For the rest of the Sandwich:

Slice the croissants in half, but no slicing all the way through, so that it opens flat (butterflied)

Slice the boccocini into thin slices, approximately 4 each for the big croissants and 2 each if you are using mini croissants.

Now simply start to assemble your sandwich. First liberally spread the Hot-Pesto-Mayonnaise on each side.

Place equal amounts of boccocini, basil and Parma ham slices as the fillers. Drizzle a bit more of the Hot-Pesto-Mayonnaise and gently close shut. Secure with some cocktails sticks and wrap these in some pretty patterned serviettes.
